INGREDIENTS :
- 1 lb. fresh strawberries
- 3/4 cup sugar
- 1/4 tsp vanilla extract
- 1/8 tsp salt
Directions :
Step 1 :
Wash and hash the strawberries into ¼- inch pieces.
Step 2 :
Add the diced strawberries and sugar to a saucepot. Stir and cook over
medium heat until the strawberries release their liquid and form a saccharinity
in the saucepot.
Step 3 :
Let the strawberries poach in the saccharinity, stirring sometimes, until they
break down and lose their shape and the saccharinity has thickened to your asked
thickness( 5- 10 twinkles). Keep in mind the saccharinity will cake further after
cooling.
Step 4 :
Remove the saccharinity from the heat and stir in the vanilla excerpt and swab.
Let the saccharinity cool. Use the saccharinity as- is, or strain through a line
mesh strainer for a clear, smooth saccharinity.
